There’s something so hearty and filling about a burrito bowl. Throwing all the ingredients loosely in a bowl is tasty and easy on the days when you don’t want to create anything too challenging. Gather These Ingredients

For the cilantro-lime quinoa:

  • 2 ¼ cups of warm chicken stock
  • 2 cloves of garlic

  • Zest and juice of one large lime
  • 1 ¼ tablespoons of olive oil
  • ½ teaspoon of salt
  • 1 cup of dry quinoa

For the honey-chipotle chicken:

  • 2 heaping cups of chicken breast, shredded
  • 3 tablespoons of honey
  • 3 tablespoons of chipotle in adobo, minced
  • Salt and pepper to taste if the chicken is not seasoned

Additions for your bowl:

  • Pico de gallo
  • Black beans
  • Guacamole or sliced avocado
  • Charred corn
  • Queso fresco
  • Sour cream
  • Crispy tortilla strips

Of course, when you put your bowl together, you can include the ingredients you like and even add additional ones like chopped peppers or green onions.

Making Your Bowl

First, blend half the bunch of cilantro, salt, garlic, and stock until it is smooth. Then, warm the olive oil in a pot on medium-high heat and toast the quinoa for two to three minutes. Next, add the stock mixture to the quinoa, bring to a boil, then lower to a hard simmer. You’ll know the quinoa has finished cooking when it has absorbed the liquid. Finally, finish the quinoa with a bit of lime juice and fluff it with a fork.

While your quinoa is cooking, you can prepare the rest of the bowl. First, whisk the chipotle and honey together in a bowl. Then, toss your shredded chicken in the sauce. Next, set the chicken aside, then add a few scoops of the quinoa once it has finished cooking.
